Porchetta the Umbrian way, sliced off the roast while you watch and pressed into a crusty roll, on one of the prettiest streets in the centre. It is a counter, not a restaurant: you order, you wait two minutes, you eat it standing on Via del Governo Vecchio. The plain one is perfect, but try the Assisano with rocket and tomato if you want something fresher. A few steps from Piazza Navona.
